Stop in for Supper, friend

A good friend of mine every year has a Wild Game Night Dinner. His dad (retired B-52 pilot) started the tradition, and after his dad passed away, he picked it up.

This year, this was the menu, and some of the pictures of what we had for dinner and dessert. :)

@PARA45 , after that spread I believe I’ll lay off the thread. That puts about anything I’ve ever even attempted to shame!! LOL

:ROFLMAO: If it makes you feel better, my friend uses his friend who is a professional chef and could make leather taste good. :ROFLMAO: I've been told that my friend's dad did all the cooking. It's a shame I never met him.
 
Little dinner from last weekend.
Grilled venison backstraps, grilled shrimp with a spicy hickory BBQ sauce, brussel sprouts sauteed in olive oil and garlic, Vidalia onions grilled with butter, black pepper and garlic salt, mixed salad with homemade blue cheese dressing.

Pork loin with a nice lemon and parsley gremolata. Wild rice medley and asparagus. A nice South African cab. It’s what’s for dinner. :cool:
 
I really do enjoy wild rice, I need to cook it way more often
This is just some blend available at our local grocery store. I would like it if it had more wild in it. That said, it’s terrific cooked with craisins and walnuts added in. Or onions and carrots.
 
Italian braised chuck roast over Parmesan polenta with a nice green salad for balance. My favorite Texas wine to accompany. It’s what’s for supper. :cool:

I love a scotch egg….hmmm….how was the ostrich version?

How was the loaf of bread? That sounds kind of interesting.
Excellent if you’re an ipa fan….and possibly if not. My wife doesn’t like beer, especially an ipa. She didn’t notice. I could taste with the first bite the hops from the beer…
Any beer would work. Stout might be good

It’s an easy quick bread….

Ingredients
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 12 oz beer (lager, pale ale, or IPA)
  • 1/2 stick butter, melted
Instructions
  1. 375°F, grease loaf pan
  2. Mix dry ingredients
  3. Stir in beer (don’t overmix)
  4. Pour Into pan
  5. Pour butter over top
  6. Bake 50–55 min
Next time I may throw in some cheddar and jalapeños….

Typically not my favorite cut but I gotta say the marbling on that porterhouse is incredible, cooked perfectly as well!
Not my favorite cut either but like you said, the marbling got me….it was excellent plus it was large enough for 3-4 people. My son eats like 2 so he got the NY strip side and my wife and I shared the fillet. He eats so fast he doent notice what it is….im not sure he even chews. lol

Never seen marbling like that in a porterhouse either. I actually thought it must be WAGU, going to try that bread recipe.
 
Ate like a king tonight…

Elk filets.. cooked to perfect medium in the sude vide before hitting the grill for just 2 mins on each side for a light sear… fresh wild caught gulf shrimp.. some aloha bell peppers… sautéed baby bellas.. and some asparagus…

There’s one elk filet left over so tomorrow morning is a filet and eggs breakfast! :)

Founders All Day is my go too, definitely going to have to give it a try, thanks for the recipe!

And yeah, cheddar and jalapeños typically make anything better!

Am I reading your post correctly to say that the Tsavo rifle will be coming out with a composite stock later this year? I ask because I had been looking very hard for a Tsavo, but if there is going to be a composite stock model I will wait for that.
