Stop in for Supper, friend

Burgers on the grill this evening.
Two pounds of chuck, pound of round, Worcester, salt and pepper.
Topped most of them with Colby jack, did a couple with blue cheese crumbles. Mine... blue cheese, red onion, bacon with a slice of Beefmaster tomato out of the garden on some really good toasted rolls.

Pasta salad for a side, some fresh cucumber, banana and jalapeño peppers and sungold tomatoes from the garden. Olive oil, red wine vinegar, lemon juice and some fresh sweet and Genovese basil from the herb garden. Few black olives and red onion for good measure.

Washed it down with some properly steeped sweet tea with some fresh mint from the herb garden.

After 30 days either traveling to or through Africa and all the amazing meals I was served during that time, then coming home to my wife’s gourmet cooking, I had to express my inner white-trash.

My homemade beanless chili and coleslaw on a pan-fried dog with onions and mustard. Sometimes you just have to trash it up.

One of the last few nights we will be able to dine comfortably on the patio until late October. This buck disappointed a little last November with a little ground shrinkage (100% on me), but he does not disappoint on the palate.

Brined and then marinated backstrap, mashed potatoes with cream infused with garlic and rosemary, red wine and mushroom reduction, roasted asparagus and carrots. A nice claret to accompany. It’s what’s for dinner.

You have a PM. BTW, that backstrap looks amazingly delicious!

The same thing happened to me last year. The first buck I shot on my property. :(

Some of the last bit of back strap from the big nilgai bull I killed in November. Topped off with a Little “chimmi” , but cilantro and green onion based version,. For sides… some avocado, and roasted sweet potato with lots of butter

Nothing wrong with that at all!!!

I’ve been on a bit of a curry kick lately. Can’t beat the smell when it’s browning

Made a Rogan Josh last night, but with pork shoulder instead of the traditional lamb. Ol’ lady doesn’t care for lamb. I’m betting this will work for venison as well. A nice Argentinian Malbec to finish, just to totally mix up cultures. It’s what’s for supper.

Every culture seems to have their own version of “beans and meat”. This is my favorite. Salchicce e fagiole. Italian country cooking. You can get this dish in any al fresco cafe on any piazza in Florence. A nice Barbera d’asti to accompany. It’s what’s for supper.
