Stop in for Supper, friend

Here in Tucson, we have some pretty good Carniceria's around the city. The one I frequent has an excellent selection of high quality meats.
These are some marinated cross cut ribs that will be going on the grill later

This turned out pretty damned good...

Fresh eggplant out of my garden.
Eggplant sliced 1/4" or thinner, sweat with salt and pepper, rolled in flour, then garlic egg wash, rolled in panko crumbs, fried golden brown in olive oil.

Layer of marinara at the bottom, layer of eggplant, layer of fresh mozzarella, layer of eggplant, layer of marinara and fresh mozzarella and a basil leaf out of the garden. Baked until top is browned.

Served with perfectly grilled pork chops, sauteed mushrooms and some avocado with salt,pepper and lime juice.

If my stars line up, I will have some ripe romas to pick when the next eggplants are ready to pick. Will make a fresh sauce with the romas.

Thinking about adding a layer of prosciutto or adding some bulk venison Italian sausage to the sauce next time.

Dove poppers tonight on the treager…

Dove breast and cream cheese coated in Buc-ee’s bbq rub inserted into a halved jalapeño then wrapped in bacon…

Last night in the honor of National Burger day I grilled some blue cheese venison burgers and the first spaghetti squash of the year from the garden.

One of the last few nights we will be able to dine comfortably on the patio until late October. This buck disappointed a little last November with a little ground shrinkage (100% on me), but he does not disappoint on the palate.

Brined and then marinated backstrap, mashed potatoes with cream infused with garlic and rosemary, red wine and mushroom reduction, roasted asparagus and carrots. A nice claret to accompany. It’s what’s for dinner. :cool:

First homegrown BLT of the summer! Out of the garden on some toasted sour dough from a local bakery. I can’t claim the bacon or lettuce but the bread and butter refrigerator pickles in the second Pic are mine. The tomato was either a beefsteak or mortgage lifter, few of them got mixed up this year.

The tomatoes this year (our first season in Alabama) are the best I’ve ever eaten. Problem is, they don’t seem to make it to the house before they are eaten! :cool:

That was my first ripe full size tomato of the year. We've been eating Sungold cherry tomatoes for a couple of weeks now. I grew the cherry tomatoes along with Beefsteak, Beefmaster, Cherokee Purple and Mortgage Lifter this year.

Quite a few will be ready to pick tomorrow, so BLT's this weekend. Of course I will have to grill some burgers one night this weekend to top with a ripe slice. Wouldn't be surprised if a couple of slices end up in a bowl of grits Saturday morning!
 
Hit me up for a tomato pie recipe. Best damn thing you ever ate

Definitely will do a few tomato pies before too long. I've got my Grandmothers old recipe which uses biscuit dough as opposed to pie crust, but I like them both ways.
The topping for the most part is pimento cheese without the pimento.

I consider myself pretty fortunate to live in a part of the country that grows great produce. Lots of small local family farms to buy from. Lots of good stuff coming soon.
