Allow me to assist you in understanding his role in these matters.Isn’t this guy head of the Church of England. Didn’t he invite Muslims into Windsor to celebrate the end of Ramadan.
I guess I don’t understand his whole “Defender of the Faith” oath.

Firstly, he does not take an oath to be "Defender of the Faith" it is a title that devolves on him when he becomes king. He does take an oath to protect protestantism. The story of how the British crown got that title is quite funny actually. It was awarded by the Pope to King Henry VIII for writing a defense of the 7 sacraments against Luther's thoughts. It was probably not written by Henry but I digress. Then Henry, of course, broke away from the R.C. church and started his own version so he could get some more divorces. The British parliament extended the title back to him when the Pope took it away.
He is the governor of the Church of England, but not its spiritual head, that is the Archbishop of Cantebury.
As King of England he has millions of muslim subjects who he must protect and foster just like all of his Christian subjects. There is nothing wrong with him wishing them peace. He is the King of all British subjects, not just the Christian ones. It would be wrong from him to simply ignore civility and gracious treatment to his non-Anglican subjects.
The Easter Address thing is probably just mentioned to gin up uninformed foreigners and uneducated Brits who see scary bearded men under their bed every night. An Easter Address or message is not done on a regular basis by the British Crown, never has been. QEII, who was a great monarch, only did a small number of them for special reasons in her 70 year reign. But King Charles personally is a deeply religious man and has already attended the Royal Maundry service. He is also scheduled to attend services Easter Sunday.
