African Braais- your favorites ?!

Ok, I`ll throw one out there ......... for all the Africa hunters, what is your favorite braai / BBQ dish ?

Me, I love & crave skilpadjies & when I am hunting in SA, I always ask for them on the braai - lambs livers encased in the fatty net of the stomach lining. Hot off the BBQ they are literally mouth watering!

What`s your favourite on the braai?

Being South African..........braai-broodjies is a must-have on any respectable braai occassion.

I prefer my gourmet version:

Sourdough bread,
Mozzarella,
Gruyere,
Gouda,
Sun-dried tomatoes,
Fresh basil,
Red-onion,
Lemon mayo,
Black pepper,
Cayenne pepper.
 
braai-broodjies are a favorite of mine as well. My last trip I sliced some sausage links in half lengthwise and added to the Onion and cheese braai-broodjie - the entire camp thought I lost my mind - but it was delicious.
 
Oh, too many to count !

But my favorites to go on the Braii would have to be:
Impala Chops
Impala liver
Eland fillet steaks (just make sure it’s not taken from a bull that’s in the rut)
Gemsbok chops
Reedbuck chops
Leg of bushbuck
Sable chops
Kudu ribeye steaks
Young Guinea Fowl (shot in the grain fields)

But my No. 1 favorite would have to be giraffe fillet steaks. The amount of marbling surpasses even Grade 5 A12 Japanese Kobe beef.

u really just cannot beat a good old rump steak on the braai
braai broodjies are a side dish, along with pap and sauce

but a favourite has got to be beef rump steak

Also my favorite.
 
Of the game meats I think Gemsbok was the standout.
The PH grilled several varieties of backstrap in our stay.
 
Zebra tenderloin.
 
Also a big fan of skilpadjies! And also in the "bietjie braai" category, those fatty sheep tails, i can't recall the name.
Please forgive any spelling/grammar/usage errors in my Afrikaans!
 
Any tender piece of wild game meat cooked rare. I love sudza on the side to mop up the bloody juices. When on safari meat must be wild, no need for "raised" anything.

A braai with good coals and smoke, PH and me/my group and the sounds of Africa. Oh the memories. Feeling the need to be back there.

So many good meals in the past..but tenderloin from cape buffalo is a favourite..

Elephant stew aint so bad either..
 
Ox-tails and gravy! Of course, that's really buff or eland tails. Eland or sable filet with peppercorn cream sauce. Zebra steaks...just remove the yellow fat please and pass the Mrs Balls chutney!
 
Zebra tenderloins grilled to a perfect medium rare.
Cape Buffalo (ox tail) tail in a dark curry sauce / stew.
Springbok liver and tenderloins wrapped in caul fat and roasted over coals.
Giraffe steaks grilled to medium rare and served with a green peppercorn sauce on the side.
Grilled ostrich skewers.
Grilled Eland fillets
Wildebeest (blue or black) kebabs
Braised Kudu chops in a delicate brown sauce,
Sable steaks grilled to perfection.

The other one I enjoy & often make myself is a pofadder, if you get an impala or bushbuck, take the liver & a two foot length of intestine, wash the intestine thoroughly & wash it again & then, knotting one end fill it will chopped liver, onions & herbs & spices to taste, knot the other end & then braai over warm coals until it is cooked thru. A great way to do a liver on the braai!

Duiker stir fry is amazing. Blue wildebeest tenderloin is right there with it.
 
The heart from my Cape Buffalo cooked on the braai a couple of weeks ago was pretty special!

If we are doing organs, here`s one ....... fried & battered buffalo balls ! Not for the faint hearted.

Oh yes I love the little tortoises (Skilpadjie) & Roosterkoek, with either Gemsbok-Sable or Eland, actually near any African game meat but those are favorites .
