I also chuckled when I saw that Utah was in the Midwest.
Bear meat in the spring is edible but not great, also extremely lean after a winter living off reserves. A bear that size might be better, must have wintered well. In the fall they pound down acorns, service berries, elderberries and choke cherries and the meat improves considerably.
The last couple I was involved in had very few insects, I remeber commenting on how clean they were. Maybe after a high country frost they are rid of the ticks etc
