gardening and the back yard

I lit a fire this morning to warm up the house.

Gardening???
You and I are in the same boat there I lit a fire this evening to take the chill and dampness out, we don’t get planted here until the end of the month or early June. Still a lot of frosty mornings this time of year.

Do any of you gentleman who garden that far south happen to have a recipe for jalapeno pepper jelly? I had the chance to try it a few times in my teens when father would pick up loads of tires outside of Beaumont, there was a little dinner there that had fresh warm bread on the table during breakfast service and pepper jelly.
Often thought I’d like to to try to make a batch it’s not something that can be bought up here.

Loads and loads of recipes of all sorts at All Recipes.

I don’t make Jalepeno jelly but it is very easy and tones recipes, if you want it hotter just leave the seeds and white membrane in.

I do make …..

Carolina Reaper & black cherry jelly.
Scorpion pepper & Poteet strawberry jam
Ghost chili & Fredericksburg peach marmalade

IDK if you or your missus have ever made jelly, but it's one of the simplest things to can.

  • pectin
  • sugar
  • water
  • fruit juice
  • peppers, optional
That's really it. Make sure your jars and lids are sterile, mix the ingredients in appropriate portions, pour the liquid into jars, seal the jars.

Made a fair amount of berry jams and stewed apple preserves over the years, was just wondering if anyone had any grandma secrets they’d share before I attempted it the peppers are a little pricey here fine if I’m successful but a nuisance when I inevitably miss.

The thing about jalapenos especially is they've inconsistent heat. I've had some so hot they'd raise a blood blister on an old leather boot, and others about where you'd expect them to be.

Buy some seeds, put them in a big pot, then stick it in a sunny window. Grow your own peppers. I often dig mine out of the garden to overwinter in pots, bring them inside on those rare nights we get below freezing here. They're very low maintenance - warmth and water is about it.

Do like grandma did - just experiment. Given the variability of jallys, some jelly will be really hot, some of it will be right where you want it.

Worth a try im not sure how well they’d do on the 45 parallel the hottest days of summer only make it to about 20c/68f here, nothing between me and Maine but water so there is always a good breeze.

A batch of the hot jelly would be good for putting in thumb print cookies and taking on the boat.
