If it would be of concern to you I would suggest that you talk to the outfitter about it before even booking the trip.

Same here, I was unfamiliar with this term. In the United States, people often refer to this as 'allergic to gluten' or 'gluten allergy'.

I do not see why this would be a problem. All of the outfitters I used had me fill out a questionnaire - in each case there was a question about food preferences and allergies. I doubt this would be a problem with any outfitter, especially those that advertise on here.

In addition to heaps of meat, they may be able to serve the southern African staple corn meal as a gluten-free alternative to pastas and bread.
 
My ph buddy had a client coming in the week after we left with gluten free need. I would strongly suggest talking with the ph or outfitter to confirm what that diet looks like in terms of need and what are absolute no’s. Should be no problem!!
