Building a Left Hand 7x57

This is my “working man’s” 7x57. It’s an M70 in a McMillan Edge. 7lbs 7oz field-ready w/Leupold fixed 6x, sling, and ammo. It’s not fancy, but it’s a killer.

Buy a good used Mauser 98 action or complete rifle to strip instead of a bare new action. It's cheaper, authentic for that classic CRF look, and your gunsmith friend can do the needed work bolt handle, safety, etc..

.257 Roberts as you mentioned or any 7x57 parent very straightforward.

7mm-08 or .308 parent rifles also convert cleanly to 7x57 especially small ring Mausers.

Good donor rifles: Argentine 1909, Czech VZ 24, or FN commercial Mausers.

New actions: Zastava they make left hand 98 style, or high end like Granite Mountain Arms if budget allows. Most lefty Mausers are custom anyway.

Barrels: Shilen, Lilja, or Lothar Walther for premium. Douglas or a quality blank from a smith you trust also works great for a classic build.

3-position safety like Winchester Model 70 style or classic Mauser wing if you prefer.

Proper heat treat check on any milsurp action.

Classic stock walnut, blued finish, and 22-24 barrel for that balanced feel.

Since it's a lefty build, discuss bolt stop modifications with your smith early.

This route will give you exactly the rifle you want. Sounds like a fun project you'll love it when done.
