Panther (poached in a tea garden in Assam, India, long ago), red ant egg curry (Assam), fried fish intestines (Assam), water monitor (Assam), alligator (in USA), horse (in France), kangaroo (in Germany), haggis (in Scotland) come to mind, besides the usual stuff. All animal organs are fair game. Cleaned and deep-fried fish intestines, mainly from varieties of large carp, is a very popular delicacy in Assam and a particular favorite of mine. Latest new to me experiment was with silkworm pupae, boiled and then deep fried. Goes very well with mild rice beer, crunchy on the outside and like melted cheese on the inside, with a surprisingly prawn like flavor.

Many years ago in Italian delis you could buy "musciamme" (moo-sha-mae) i.e. dolphin dry fillet. Soaked in lemon juice, as someone eats bresaola, it was good. Now it is absolutely forbiddedn to kill poor dolphins.

We fried up aoudad nuts last spring. Trans Pecos oysters. Our outfitter was slow to give them a try though.

@SCHUNTER73, Did you eat any of the meat? I hunted turkey with an outfitter that also ran aoudad hunts in west Texas. He said they wouldn’t bother bringing down the meat of free range aoudad. Said it was inedible. He did say aoudad on ranches that fed protein and corn year round were “tolerable”.

I have had bobcat…. In the form of “ trampoline sausage” all meat from trampoline mixed
Cape Buffalo Rocky Mountain oysters are pretty damn good

I've done african lion, rhino, and croc among others. The lion was surprisingly tender and juicy. Interesting thing about lion is that it turns white like chicken when you grill it. The rhino was also tender and tasty...had its own unique flavor. The croc tasted like fish to me.
Mountain lion turns white as well. Reminds me of pork in looks and texture. Makes fantastic breakfast sausage.
Had elephant from my tuskless last December. Flavor was amazing, but you better put your good teeth in and be prepared to give your jaw muscles a work out.
Asked my Zim PH about eating croc. He said he wouldn't. Said most large crocs they killed had native bracelets or jewelry in their stomach. Didn't wanna eat something that had eaten a man.

We did not eat any. He highly discouraged us from taking any of the meat, and said the two we killed would likely be very rank/tough. Seems to be the prevailing opinion, but others say it is fine to eat.

Here we are, the last day of the show in Denver, it's been a good show but expecting a quiet day today. I will be back for-sure to do this show next year and maybe also do the one in Sacramento California.
