I'm not one to believe that all cartridge development stopped with the 308 win. 30-06 and 375 h&h. But it was sure close. You can make about anything you want from these three cases.
 
Much fun has been had by many, that's better than fighting. A concern developed years ago that if I shot an animal and it was finished by the PH, what level of satisfaction can be gained ? Innumerable scenarios can occur. Good insurance for the hunter claiming his prize would be an above and beyond weapon they can shoot accurately. Saw a buffalo ph in Australia barely give the hunter's shot an evaluation and follow up bam-bam. This ph seemed to practice this as normal thought process, immediately follow up with guns a blazing. I would want a ph that joins in the fracas when ABSOLUTELY NECESSARY but not before.

+7x57 (predated the '06 by 9 years-nearly equal in AI form. I think Browning may have just copied Mauser). so many great improved 757s!!! Love the cases you mention as well, but the 308 not so much, due to range limitations. That, and a bad loaner 308 experience as a kid! :p

I believe there's a PH quote out there by which many more (poorly-shot due to heavy recoil) Wby shot game has been finished off by a PH! ;) It's not joke! "I've seen more 3-legged animals via Weatherby than any other round!" RIP Gordon Cundill, PH, Esq.

I can almost bet you've never, ever read anything written by Kevin Robertson. You may wish to do just that! There's the gun, and then there's the practical application of it, in hunting...

If Bell killed (ALL dangerous game) effectively w/ 7mm and Jamieson w/ 6.5 mm, Hemmingway w/ .30-06 (ALL heaviest-for-caliber FMJs,) I believe the greater insurance afforded by the non-Wby .375s/416/<577 NEs will also do the trick, and history has proven that!
 
Have you fired the gun you are selling? Can you send us a representative test target and load /recommendation? Here is an example of what a competent shooter/handloader can expect from the greatest invention borne out of the .460 Wby (.460 and .378 scrapped in favor of more manageable, higher BC/SD, lighter weight bullets-the .338-378, in this case the prior wildcat the .338 A-Sq.) Phenomenal performance!!!

Not much on the 308 either but like the 243, 260, and 7mm 08. Have a 358 win. that I like for black bears. The 30-06 in a good modern rifle with a 24 in. barrel and a good handload well do anything a factory 300 win mag will do dito 338-06 compared to 338 win. mag.
 
And how will that improve the quality of my life?
by proving to us how wonderful the gun really is, and convincing one of us to buy it! :) hunt photos would be a plus!

I have always seen the 378 Weatherby as an intriguing cartridge.

I have to believe that a properly built, minimum 10lb all-up and braked 378 should be easily managed by a fellow who really wants to shoot it well. The casual shooter? Not so much!

If we start asking if something is necessary, we automatically open the door to questioning just about everything we do in this hobby/passion of ours!
