Is it possible to get it refunded? I’ve read something about non-EU residents can file for a full refund on VAT.

No, the VAT refund only applies to goods, not to services.

I hunted there last year with Real Hunting Spain. Manuel is a younger guide but does a very good job. I ended up with a Southeastern ibex and a Roe deer
