Welcome to the community Charles. I think it is a prerequisite that if you are LA you know how to cook. One of my best friends and fishing buddies is from Baton Rouge and taught me everything I know about Cajun cooking. With the exception I was born in Mobile and my 92 year old Mom still makes the best seafood gumbo I ever tasted. Ever!
