How many grillers/outdoor cooks do we have on here? What are you gents cooking up this fine day? Traditional burgers and hot dogs?

I’ve got a couple tri tips on the charcoal grill going that I’m going to reverse sear along with corn on the cob. My wife made a Caesar salad and a cucumber salad with onions, tomatoes rice vinegar and salt and pepper! Oh and a blackberry cobbler in the cast iron.
 
Just the wife and I tonight. Keeping it simple.

Smoked pork butt. Bone pulled in second picture just to show how tender the meat is after 13 hours.

We had Saturday's left over vacio with eggs and arepa for a late breakfast washed down with mimosas. For a late lunch, I grilled burgers and hotdogs washed down with G&T's. Mama didn't want a hotdog so I jokingly called her a communist which got her fired up. She said "I'm not a communist! I'm a US citizen! I even married an a$$hole of a US soldier, so I am not a communist." :ROFLMAO::ROFLMAO::ROFLMAO:

We did not grilled, wife wanted to have shrimp. So that is what we did. I also smoked a Padron 1964 to celebrate our Independence Day.

Put a butt on the Big Green Egg at noon for supper and a couple of Nathan’s hotdogs for lunch. After devouring the dogs got on the tractor and got a dove field and a pea patch disked up while the Egg did its magic.

7 hours at 275 and the butt was falling off of the bone, 30 minutes later I was in a pork coma from eating too much. The wife was close behind.

Reverse searing is a game changer, more people should try it.

Vacio is my favorite steak. Traditional cut. I don’t know what the hell left over vacio is, though. :cool:
 
Baby back ribs on the Big Green Egg. Just used a healthy bit of Salt Lick garlic dry rub and put them in the rib rack and smoked them for two hours at 240 degrees, then wrapped them in foil and put them back in for two more hours, then put them in a soft sided ice chest for an hour before serving. Perfect, falling off the bone ribs.

:ROFLMAO: :ROFLMAO: Leftover vacio is as rare as a free range 60" kudu, but it happens sometimes. It is really good with a quick refire and sauteed onions, red peppers and Risaralda Reaper peppers with over easy eggs and an arepa.

What is in with the shrimp ? Recipe maybe?

Not much of a recipe, but more of trial and error on my part. Lemon Pepper seasoning, one lemon, white wine (no specifics on the wine, whatever you have around), garlic (Lots of garlic, love garlic). On the skillet, I melt butter and mix it with Olive Oil. Enough to cook the shrimp. My wife likes that juice over her rice, so I tend to put more butter and Olive Oil in the skillet.

Season the shrimp with the Lemon Pepper. On the skillet cook the garlic until it is aromatic, and then I put the shrimp in. I only turn them once. Pour white wine, and lime/lemon juice (whichever one you like more) over the shrimp while they are cooking. Once cooked, serve over rice, or on the side.

We did a fish fry
Bass and brim a few cats.
Fry’s and hush puppies
With cc12 mixed in lemonade ( feels like 109f) to hot for just whiskey
 
I DIDN'T GRILL AT ALL BUT WE DID MAKE A QUICK TRIP TO SAN ANTONIO FOR TEX-MEX, RIVER WATERS AND FIREWORKS. LOOKS AT A COUPLE CONDOS TOO, BEING ABLE TO WALK TO THE RIVERWALK IS KIND OF APPEALING. MIGHT MOVE HOME AFTER 4 YEARS.
 
Da bomb: halve and take the core except for the outer two petals of any large onion. Stuff with a mixture of ground beef, cheese, 1 egg, and season the mixture liberally (or to taste) with your favorite rub (I use a garlic cilantro). Wrap with bacon (I make mine) and brush with bbq sauce (I make a smoky orange sauce). Cook in your outdoor wood fired appliance @ 350F for 45min.

The gumbo slam: It is just shrimp, andouille sausage, muscles, sun-dried tomatoes, baby potatoes and early corn cooked on the bottom rack of my wood oven for about 30 minutes. All served over a bed of rice.
