What are your favorite hunting camp meals?

I have been tasked with coming up with a menu for 20 at a hunting lodge in South Texas. What are some of your favorite meals? Breakfast, lunch, and dinner. Thank you.
 
Chicken Fried Steak was the first thing on my menu. I don’t have a smoker there to do a brisket, or it would be on the list.

That’s the beauty of the brisket tacos, you smoke brisket where you have time then cut it thin and rough chop then vacuum seal….. run some leftover baked potatoes from the night before into a skillet and brown them, add the brisket and some whisked eggs and you have your taco filling made quick.

Another good dinner is grilled tenderloin, sliced thin…. Grill some thick garlic bread until crunchy and cover with thinly sliced tenderloin.
Cover with red wine mushroom gravy and serve with asparagus.
 
I do have steaks on the menu for the last night. Nothing quite that fancy though.

Thought about doing a brisket here and taking it with me, but I’m trying to do it all while I’m there.
 
Breakfast: Raisin bran & brown sugar with rehydrated dried milk; instant coffee

Lunch: Sliced ham (canned) & cheese sandwich (margarine [no mao!] & whole wheat bread); granola bar; washed down with snow

Dinner: Canned chilli on bread; canned fruit; more rehydrated dried milk (calcium to prevent cramping); multivitamin for desert

All are served on paper plates/bowls with plastic utensils = into the fire with nothing to wash up but coffee mug so I can get into the fartsack ASAP.

You can try this menu with your crew ... but only if you can run real fast. Eating has never been that important to me.
 
Been in the South Texas hunting industry since 1990’s ( 2 large crockpots HELPS)
Breakfast I usually do a crockpot breakfast or something like a option of cold cereal, pastries , HEB fruit bars, granola bars, chocolate chip cookies ( as a pocket snack)

How to make Crockpot Breakfast Casserole

Ingredients
1 dozen eggs
1 cup milk
2 lbs of hash brown potatoes. (you can use frozen hash browns, just cook for 8-9 hours, instead of the 7-8)
1 lb of bacon , drained and cut into pieces. (feel free to substitute with your favorite breakfast meat..sausage, ham, etc)
1/2 cup onions – diced
3 cups cheddar cheese – shredded
1/4 teaspoon dry mustard
1/4 teaspoon garlic powder
1 tsp salt & 1/2 tsp of pepper (I am recommending an additional pinch of salt and pepper for each layer of hash browns)

Instructions​

  • Beat 12 eggs until well blended.
  • Next, beat in milk and garlic powder, mustard, 1 tsp salt & 1/2 tsp pepper. Set aside.
  • Layer potatoes (I suggest to season each potato layer to taste.....a small pinch of salt and pepper) and sprinkle 1/3 of the onions.
  • Next sprinkle 1/3 of the bacon.
  • Last but not least, top with 1 cup of cheese.
  • Repeat this layering 2 more times to have a total of 3 layers....ending with cheese.
  • Take your egg mixture and pour over layers. For refrigerated hash browns, cook for 6-7 hours on low. For frozen hash browns, cook for 7-8 hours on low or until eggs are set. Plug in before you go to bed or as directed for when yall want it done.

Lunch is leftover country style pork ribs, served on tortillas as tacos, with shredded cheese, HEB pico de gallo , guacamole
Or a crockpot pulled pork sandwich or tacos, coleslaw

SUPPER
Steaks or ribs on a grill ( uncle Chris steak seasoning or pinch of salt and pepper
Baked Potato
Salad



I always have one crockpot on warm with a pot of pinto beans or black beans
or sausage and cabbage for a hot snack or a mid day meal

Imo 20 people is hard to fry enough CFS & fries, gravy in a timely fashion or without a lot of help

I agree on the tough aspect. A friend of mine makes their CFS on a griddle with clarified butter. I was going to take my 3 burner camp stove and use that method vs. frying.

Eggs & sausage, pancakes

Cheese Hamburgers & hotdogs
Grilled honey baked ham and cheese

Steaks or pork chops
Griddle CFS and gravy
, fajita/ street tacos ( precooked at home and chopped up and griddled @ camp
 
Steaks, CFS, and fajitas were all on my idea list for dinner. Great minds think alike. Lasagna was my idea for the first night. 4 nights.
 
When I first started hunting I was 17 years old and broke. My camps were pretty basic. Food came in ,and was eaten from, the can. Baked beans, braised beef and Coca Cola. Sometimes there was even stale white bread.
I remember taking this photo because I was so excited about finally getting a camp stretcher. Bloody useless thing broke not long after the photo. So back to sleeping on a piece of canvas on the dirt.

I don’t know how I survived. Young and dumb I guess!

So now any bloody thing is fine.

Breakfast burritos are usually a good meal. Some of the guys will wrap up and take them with them if they are not ready to eat first thing in the morning.
Spaghetti and garlic bread is another favorite, easy to make and lots of it for big eaters.

Four nights?
King ranch chicken casserole, lasagna, sausage and cabbage, Macaroni casserole
Jambalaya, shrimp gumbo and rice , chicken and dumplings
Or a premade thanksgiving dinner ( 2x turkey, stuffing, green bean casserole) packed in foil covered containers and 1 hr reheated @ 325

Have been my favorites for large family style meals

Rum bunt cake , or chocolate pecan pie with fighting cock whiskey sauce on top

3 cups oat flour (you can make this by simply dry blending rolled oats in a blender until it is a powder)
1 ½ cups powdered milk
¾ to 1 cup sugar
Directions:
This recipe can be made many different ways. If someone hasn’t eaten for a few days,
then a thin, runny consistency helps to ease their body back into eating food.
kids like it thicker—some of them even like it with a bit of milk.
With this in mind, the three ingredients up above are added to boiling water (very similar to making oatmeal or other such breakfast foods). The amount of water varies because of preferred thicknesses.

Peanut butter
Directions:
Add small amounts of peanut butter to atmit mix
and stir until you can mold it in your hand without being sticky
Note: additional ingredients of your choice can be added
such as mini chocolate chips, or shredded coconut etc.
 
Great suggestions already. I might suggest a couple of my favorite cookbooks for outdoor meals. I have tried many of their recipes and added them to my favorites.

20 hunters are going to drink a couple gallons of coffee in a very short time. 2-4 simple coffee makers running will be needed.
Breakfast sandwiches can be done in an oven for a large group. English muffins, cheese, Canadian bacon, eggs off a pan.

Dinner: Barbecue--brisket and potato salad, cole slaw, beans.

Buying a 40 cup coffee urn on a timer was the best decision I’ve made for myself when not making cowboy coffee
The morning routine of packing trucks, strategizing with guides & hunters just doesn’t jibe with coffee duty
