Sambar Deer in Texas - good to eat?

I second Poton's view . Sambhar Deer makes for excellent eating ! You can actually cure the loins like bacon .
I baked this pizza a month back and decided that it could benefit from a
little bit of venison " bacon " on top .

Sambar hunter, you antler collection surpasses even my collection off whitetailed deer antlers. As you did with your excess antlers, many years ago I began tossing antlers into bins and barrels.
For the past 15 years, I have hunted only exotics here in Texas except for a few does taken by my grandson.
Even elk ( family favorite to eat) are exotics in Texas plus all the many exotics from out of country.
I have even seen pix of African exotics, including giraffe, shot on a Texas exotic ranch where a person staged his "African Safari" .
 
We ate a real lot of Sambar venison from these and others over the past two years,we..... me,my friends/family and my dogs. My dogs eat 90% venison and offal.

Great collection of antlers sambar hunter. Antlers have never worried me, tho I would like a good set. My mates property has a 36 in her but only seen him once. A good feed is better to me I can't really eat the antlers ha ha.

I find it changes depending on what they have been eating. A sambar eating clover tastes different to one eating wild forage.
Different species vary in meat texture as well. It also varies depending on the age of the animal and how it is treated after death. If treated properly even an older animal can be mighty fine eating.
Mistreat the meat and all you end up with is a lot of ground/ minced meat for patties or meatballs or at the worst a pile of dog food.

AHG owner's an asshole so wouldn't have used him anyway. Eastern Cape - Houston, TX, so your mileage may vary. NEVER use Karl Human Taxidermy aka Wild Africa Taxidermy on Eastern Cape. Trophies arrived shattered with no padding/packing material.
