I hunted so many bears around those years since I’m in this business. A good taxidermist will be able to do the mounting very close to the original size if every steps are taken. For full size they are ordering usually 10-15% smaller foam size but this will not afect to much the general view size.
I think each taxidermist is good to mount something, you need to choose the right one for your own project.
The bear in the picture is a medium size bear not finished ((working in progress) for me is looking nice (head) and very close to real size according to the pose position decided by client.
