There are huge variations in wood quality and characteristics, within species, depending on where the tree grew and which piece was used. However, English is usually stronger. Black is sometimes more pretty to look at.

@bruce moulds both have good grain structure through the wrist, I learned a lesson a number of years ago when I used a marginal pre-inletted stock on a 338WM and it cracked on the 27th round, since then I have been very diligent on selecting good structured stocks.
I am leaning towards the english for the 7x57 and I plan on building a 400 Whelen that I will use the black walnut with.
