Why the lace fat on the antlers? I’ve never seen that before.
The stalker cut out the abdominal viscera and draped it over the antlers so that we could more easily find the carcass in the heather. It was called “the veil.” It stood out surprisingly well!

Great photos, congratulations on your first highland stag!
It might have been the lads' accent but we usually call it the the 'caul' (pronounced cawl) or caul fat in Scotland. It's handy, as you say to mark the beast for collection but also wrapped around a haunch when roasting it bastes it, keeping it moist.
It's also used to wrap faggots (meatballs made from minced trim and offal) in.

Congratulations on the first Scottish stag. Stalking in the highlands is a truly memorable experience.
Next time you go perhaps drop your bullet weight to 140 grain. Hill stags are not massive creatures and the extra velocity can be useful. 140 grain bullets from a .275 Rigby is a classic combination for hill stalking.
