Getting things sorted out with Pelican double rifle case. Taking 2 rifles in cases. Can I just totally leave out the center foam ?

Possibly, but when I do that the guns are always in full length gun socks. Stretchable scope covers go over expensive optics too.
 
Yes. Use a soft case instead of one section of foam.
