Scottish Highland Beef

interesting to see some of you gentleman have had good luck with highlands , I’ve opened a few and always been disappointed in them. That said they’ve always been a novelty breed favoured by “yuppies” here. I never tried finishing one myself to kill but carcass wise they would have made sense, Herefords and belted Galloways worked best for me. My customers wanted 300+/- sides.

I’ve sat on this comment for a while. I have to ask; what does custom process mean to you? Custom, should be your aging and cut demands. If you have a small family slaughter house doing your work, would you pay the extra/lb. for the service of the rail space? If so, tell them. I’d bet they’d accommodate. Well, if they have sense they would. I’d sure do it.
Betterinthebush: I think we are largely in agreement regarding the concept of "custom processing" provided that the processing facilities are adequate to accommodate. Offhand, I don't know whether they have excess rail space available for rent, nor what the upcharge would be if they do. I would certainly be willing to make the suggestion. Of course the next question becomes whether the customers would be willing to pay the additional cost.

RLL: That looks like a nice modern facility.

We still haven't heard back from BonUm16 regarding what he decided to do. Which was the genesis of this thread.
 
If you are used to good steaks it will be bad. If you really want to do it I would recommend grinding most of it. I raise Prime Angus myself. I hear all these hobby breeds talk about how great their meat is with all kinds of hype along the way. They will talk grass fed and lean etc. Personally I want grain fed prime beef!

You and me Phil have the same mentality there, only thing we differ on is breed. I preferred Herefords myself although father and I did at times cross with shorthorn.

You will get no argument from me on Hereford as far as flavor. Likely better than Angus. I grew up raising them. Angus are just easier to breed for marbling. I use bulls in the top 1% of the breed for marbling. My dream is to AI some of my cows with the top marbling Hereford bull in the breed. That would be something!

Have you tried crossing Hereford/angus before? I never had the chance, I know they’re real popular out west They call them black baldies.
 
Hereford bull on an Angus heifer for first calf freshening is an excellent F-1 terminal cross for calving ease and thrifty growth. I sold Hereford bulls to angus breeders specifically for that purpose.

That used to be real popular here with the dairy guys as well, breed Hereford for the first calf for easy calving. I loved those crosses for cows (black whitefaces) breed back Hereford.

Sure. That is what we did when we went black. That was popular commercial cross most of my life. It has faded in favor of straight Angus a bit however.

Am I reading your post correctly to say that the Tsavo rifle will be coming out with a composite stock later this year? I ask because I had been looking very hard for a Tsavo, but if there is going to be a composite stock model I will wait for that.
