I recently harvested an elk in NM, and was wondering if people could share some tried and true elk recipes, especially burger recipes.
 
Used to say a good spaghetti or a stew could not be made without moose or elk meat.
Pressure cook the meat for 15 minutes from the time it starts rocking. All salt and pepper
normal, except for a couple extra bay leaves in the stew plus a sprinkle of chili powder, of
course.
 
Google elk osso buco. Absolutely my favorite elk dish.
 
My wife makes an Elk bourguignon that is wonderful, just look up a beef bourguignon recipe and substitute elk backstrap cubed for the beef. Served over mashed potatoes or pasta, it is delicious
 
Both of those, the bourguignon and elk osso buco sound delicious.
 
With my last elk i tried the meatball recipe from meateater. com with some of the ground meat. Was very pleased. I drove and was able to bring everything home in freezer so wrapped pure ground meat wrapped in caul fat for fancy burgers, also used about 15% fatty brisket/85% ground elk for burger meat
 
We use alot of ground elk-we just mix it half and half with beef. Sloppy joes, tacos, spaghetti, taco salad, and yes meatballs!
I also love the stew meat in stew or stroganoff
 
Hard to beat a good moose or elk stroganoff with large egg noodles.
 
Not a burger but: Rub with lemon pepper, a little kosher salt and bake at 200F until internal temp of 135F
