Hey Guys,
Question… I have one of the high fence places I was going to maybe whack something for the freezer…
They have some Water Buffalo to get off the place (fairly cheap)
They have some Watusi Cattle
Bison (which I always like from some 2/3 year olds around 1,000 pounds up to the big boys at 1,800 pounds plus

I’ve never had Indian Water Buff but they are huge…nor Watusi which are also huge
Might shoot one with my double

Thoughts?

I’d go for the Watusi if it is like Ankole to eat over any Water Buffalo, most Buffalo Bulls are a bit (or more) on the tough side ?

Agree with Sarg on choosing the Watusi for the table, though I am sure the Donner party would have welcomed any water buffalo....I am just not that hungry.

Never tried Watusi but have had South Asian Water buffalo plenty. It was the preferred steak when I was in Nepal as it wasn't holy beef cow. Cooked properly with the right seasoning it's....okay. Don't expect store bought steak taste. But if it's cheap and you can use your double go for it! You can always donate the meat to needy families so nothing goes to waste or have it made into summer sausage or biltong too.

Yeah, I would pick the bison. Unless it’s a one year-old or two year-old animal you’re basically talking about several hundred pounds of hamburger anyway. Probably the best hamburger you’ve ever entire life but nonetheless. We’ve taken four Wyoming bison as a family amongst me, my dad and my brother-in-law, some on the ranches and some in Jackson. Old cow absolutely full of flavor tough as nails best hamburger you’ve ever eaten no terrible steak. Young cow all of it was good. Old bull was fantastic. Hamburger we knew from the old cow that we shot that there was no reason to process it for anything else. The good news is we had hundreds of pounds of it. I would grind everything but the tenderloins. The tenderloins I have pound flat and cook like a chicken fried steak.

I’d be tempted by the bison too, especially a nice 2–3-year-old, but those water buffalo and Watusi would make for an interesting change. I’d check the meat quality and processing options with the ranch first, since size alone doesn’t tell you what you’ll get in the freezer. With any of them, make sure the setup and your equipment are appropriate for the animal, and plan the shot carefully.

I’m headed over (about two hours) to do this with my son in about two weeks
Oddly, I never saw any replies on this till today.
I do like the suggestion of biltong and so forth.
It will be more meat than I honestly want regardless.
I imagine the “good cuts” of meat are still pretty good… probably need some seasoning and perhaps some sauce lol

I do not do beef, so cannot comment on th taste, but India is one of the largest exporter of buffalo meat in the world. So obviously it goes somewhere and people must be having it. Doesnt make any difference I guess over people that have tasted them, but thought I will share...

I hunted the water buffalo in Australia. I was surprised when we didn't keep any of the meat to eat in camp. My outfitter said it wasn't edible--that the Aborigines don't like it, either. Cape buffalo in Africa, however, is quite tasty.

Do you mind me asking what auction you are referencing? I'm not in the market for any of those rifles...just curious.

Good morning from Montana.

I'm looking at a post from 2018 where you were looking for a lefty Winchester in .375 H&H Magnum. I'm selling mine. My email is [redacted] in the event that you're still searching for a unicorn.

Best,

Kelly Palmer
