Yes a .416 RM can be loaded with 350 and/or 400 grain bullets for DG. Stay with your .375 as it is so much more versatile and fun to shoot. My .375 has run everything in plains game and my CB.
6MM Remington is a great cartridge had one in a Ruger M77 that could really shoot. I do like my .243 Ackley Improved shooting a Sierra 85 grain HPBT at 3370 FPS.
All of those brands are good primers. As a handloader I have experienced the best accuracy with CCI and Federal in my .375 H&H and WLRM in my .300 Jarrett.
All the above comments are spot on. It's always good to shoot what you are most accurate and comfortable with. 350 or 400 grains will not make much difference with proper shot placement.
