Whatch the Cajuns it’s all roux color, holy trinity and a couple different meats.

I like a peanut butter color roux personally unless very dark meat is involved like woodcock then I’ll go to a milk chocolate color

My two finest rams that I ever produced wouldn’t sell at my price. So being a practical man, rather than give all my years of breeding away for $79/cwt, I slaughtered them, hung them for 10 days and processed the saddle of each for the table and froze the rest for the dogs.

387#’s of mutton. I think they look glorious.

We have a thread for cigars, another for whiskey. Figured I’d invite a crowd and start a thread for what is for dinner tonight.

Those rib steaks look pretty good - I'd be tempted to try one if BQ'd on a hot hardwood fire.
 
Repping New Mexico, My New Mexican Red and Green Christmas Chile. Not tonight but fairly often in the winter, I make my Christmas chile. Christmas because it’s not typical to mix red and green chiles in a dish. But I love my Pendery’s red chile powders and of course Hatch green chiles are always a welcome ingredient. This recipe has won me every contest I’ve entered.

I also started making biltong recently both venison and beef. It is easier than expected and great tasting.

Well, the ol’ lady liked it. Mission accomplished
 
Cheese stuffed jalapeño, wrapped in ground sausage, wrapped in bacon. Seasoned and cooked in pellet smoker.

Also Chicken Cordon Bleu cooked in pellet smoker

A little Low Country Boil for two. Storming so moved everything inside. The usual fare plus some wahoo for good measure.

@Flipper Dude , how did the wahoo hold up to the boiling? It’s firm enough that I assume pretty well. On occasion I’ve added sheepshead or trigger fish to a boil and it turned out well.
