I wait until they just have the slightest tinge of yellow to pick them because then I know they're as large as they're going to get. Still mostly green, but have begun turning from dark green to light greenWe started picking our tomatoes when they were still green , put them in a cardboard box and they'll ripen perfectly in a week or so, avoiding the birds and other pests. Paper bags work good too.
