My wife has been telling me for months ( ever since I booked a black bear hunt with my kids) that she will not eat bear meat. I can't understand why, she has at least tasted everything else that I dragged home. Well tonight I am going to find out just how serious she is. I just put a bear roast into the Dutch oven, I pan seared it first with a little salt and pepper then added some beef broth, onion, carrots and potatoes. Crossing my fingers and hoping for the best, but I will probably be eating bear roast all week. Alone!

Don't tell her what it is till after, did this whit Elk SteKs on a BBQ to a friends wife. Next year he was elk hunting
 
I made a bear roast from a young bear that by looking at damage in a corn field you could tell that he was living in the corn.
Invited several of my sons friends to partake in the end they thanked me for the beef dinner even though I told them it was bear. To this day none of them believe it was bear so you may get away with it.

OMG, my son and his girlfriend stopped in and I talked them into staying for dinner. I told her what we were having and she said she would love to try some. I cooked up a ham steak for my wife since she was still insisting that she wasn't going to try the bear roast. We all sat down and ate and when we were finished my son's girlfriend tells my wife how good she thought the bear was. To my surprise my wife says to cut her a small piece and she'll try it. BAM! She liked it.
 
Only black bear I've eaten was from Alaska. It was a roast and delicious! My sensitive wife even liked it! Probably because she cooked it. I only cook when she's not around.
 
My family (wife and two teenagers plus me) prefer black bear to anything in the eastern US. Typically we will eat all of an average size bear- 175/200 lbs- in less than a month! My daughter and I will be in Maine in about 3 weeks hound hunting for her first bear and my son gets a chance in Idaho this spring. They are as much fun to hunt as they are to eat!
 
As long as it is a wild bear and has not been to a dump, they taste great.

Glad your bride gave it a whirl.
 
My one and only experience eating bear was not so bueno but I think it had to do with what it had been eating. I'd certainly be willing to try it again.
 
Spring bear that has been eating clover for about 3 weeks or a fall bear that's been into the Huckleberries, you can't beat for eating
 
Spring Bear is fine, but when they get into the rotting fish, the spawning salmon run its kinda of a different story. Eaten lots of spring bear, they make dandy sausage and you'll need to add a little fat as they are pretty lean that early in the year.

Couple of years ago, I got September -bear with mashed-potatoes,made by the outfitters wife.
Wonderful taste.

I think recipes should have their own spot just like other threads and a way to type in key words to look them up.
