Wish you could all see this one in person

Well, being Canadian myself I guess I should leave my igloo every now and then and take my dog sled team into town a day or two away to see if there's any truth to that. Because I've never heard of people eating horse in Canada! I have heard that it's common in Europe though. A Swiss friend of mine had told me that.
Oh, and @BRICKBURN already asked my second question!

Cam there are a few butchers that sell horse meat, when I was going to college in Burnaby my room mate bought horse meat at a place in downtown Vancouver. They had it mainly for the European people.

Yeah, I never heard of it either, but that's what I was told. I did a quick google search and this was the first thing that popped up, "But outside Quebec it's almost impossible to find, despite the fact that Canada is one of the world's largest horse meat-producing countries. Toronto has a horse meat butcher, but restaurants peddling it in the city are rare."
 
Good question! I had to ask the boss. We got it from Canada. Supposedly they eat horses up there like cows. That's how we obtained the skin.

We do have horse processors. 99.9% of the meat ships to the EU.

There is a processing plant in southern Alberta that does buffalo, farmed elk and horses. Had to take a couple of horses there a few years ago to be repurposed. France, Japan and I think Mexico are their main meat markets.

I’ve eaten horse meat in Europe several times. Back in the 1960s while in college I bought canned horse meat from Argentina. Cheap protein back then.

The taste is fine. Not a good fillet of beef, but tasty. The odd thing is, it’s very red colored. We also had it with breakfasts in Europe. Sometimes like dried jerky with breakfasts. Europeans thought I was crazy because I ordered eggs for breakfast every morning.

Gotcha. I'll have to give it a try if I'm ever in Europe. That's strange that it's so red. Haha, funny about the eggs. They'd think I was crazy as well!

1. Where did you get the horse to taxidermy?
I’ve owned a couple horses that this would have been the best use for them!
