What game meats are best?
It seems like outfitters use much of the meat harvested and that’s fine. In Australia most people won’t keep meat from Feral Pigs.
Do they make Ham or Bacon from Warthogs? I prefer pork processed
Which are the best game meats from the rest?
I read of a place that hunt porcupine. Do they eat those?
What other exotic animals did I not mention that are widely consumed?

No idea personally. Jeff Cooper wrote that impala is good enough to eat raw.

Depends on individual tastes but I like Kudu, Zebra, Gemsbok and Impala.
Springbok is good as is Eland.
Not keen on Blesbok or Warthog.
I like Guinea Fowl too.

Most meat is utilised on the farm or if sufficient quantity is gathered it is sold to locals to make into biltong or similar products.

Interestingly I seems Zebra is not considered highly amongst the local populace (at least around Windhoek) it has to be mixed with other meat and sold as 'game'.

On my last trip we found a dead Kori Bustard alongside the track which showed signs of predation.
The bushman tracker was very happy as apparently it is a delicacy so he took it home to finish it!

Eland is also my #1.
But I've also had Kudu, Gemsbok, springbok, hartebeest, wildebeest, warthog, hippo and Impala that was all good. ;)

Their sausage and biltong is awesome too.

Eland and gemsbok would tie for #1. Wildebeest, kudu and impala not far behind. I didn’t care for warthog or waterbuck.

Zebra made into cocktail sausages were/are both my wife and I's current favorite. Could go for a plate of them right about now actually.

On my first trip we ate what I hunted a day or two after I took it and everything was great from gemsbok to zebra. My PH's wife said she disliked warthog because it was usually musky, but I took an average sized, but not old warthog and it was really good. We took the cooked loin on our trip into Etosha N.P. for cold cuts. My last animal was a zebra and I liked it as both steaks and on a ZLT sandwich. My friend on the trip said she liked zebra the best, though no complaints on anything else taken. I'm not a big liver fan so I avoided the wildebeest liver served once, everyone else claimed it was good. Springbok tongue was decent.

The bushpig I recently took went to the butcher. Considering their diet can be rough, often carrion, I'm inclined to say it should be fully cooked and would be strong. But no proof there.

Springbok backstraps on the braai, #1, then wildebeest biltong.

My favourite is Zebra followed by Gemsbok, Kudu, Buffalo. I’ve ate a bit of everything I’ve shot not any really bad stuff, some is better then others, the small antelope eat a lot of shrubs and taste different.

CBH Australia, why don't they eat the meat from Feral Pigs? Not eating the meat from large boars I understand. They have what we call "boar taint." However boars under 225 Lbs. and sows make good hams, sausage etc. The African deer and antelopes are quite tasty. Zebra is excellent as well. The cook on our first safari could be head chief at any 5 Star Restaurant world wide. "Tiney or Tiny" I'm talking about you.

It depends on the cut of the meat. Impala loin on the grill was fantastic, Impala roast wasn’t too great. My favorite was Zebra loin on the grill. Zebra has a sweet flavor that I haven’t found in any other meat. I also had a fantastic Kudu stew. Blesbuck steak was tough, most Blesbuck I ate was breakfast sausage.

Anyone here eat hunters breakfast? i.e. fresh liver (impala or wildebeest) cooked in a gravy with pap?
I do in the UK. If I've shot a Roe deer on an early morning stalk I will slice and fry the liver and kidneys with some onion and top if off with a couple of fried eggs.....

I ate Kudu and Impala steaks and they were quite tasty, I also had Impala liver Pate' that was so rich I was glad it was a small amount

Eland, marinated and grilled on the braai, a delicacy.

Bushbuck backstrap roasted yummm

Impala stew, gemsbok sausages...I could go on...

I have had a dozen plus.... Eland, kudu, zebra, impala, etc.... from filets to sausages to lasagna..... it was all excellent!!!! Did not eat the warthog or night critters. Did shot Fowl & Sand Grouse for the trackers to eat.

I'm going in October for ten days and I've been wondering what meats they'll serve us. From the sound of things they'll serve a little bit of just about everything. I'm going with an open mind and open to try almost anything; that being said, I've never been a liver person and think I'll pass on any types of liver.
