Welcome aboard hoguer. There is a lot of planning to do prior to going on your hunt. AH provides you plenty of resources, you only need to use them. The folks here are knowledgeable and willing to share what they have learned with you.
 
You have Dallas and SCI coming up in January, I would suggest that you go to one of those shows and meet the outfitters. There is also the much smaller Houston show in January too.
