Besides Africa...

A bear. I'd love to hunt a bear, don't really know which one is which, or where they all hang out, but I'd love to hunt a big old bear.

Also a red stag, this if I could choose I would like to do in Scotland.
 
Well, I still have a few hunts yet to experience at home in Canada, but for a travellers hunt, ( it is difficult to set aside Africa ) I would choose buffalo in the North of Australia, Chamois & Tahr in New Zealand, Red stag and perdiz in Argentina, stalking Cappercaillie in Finland or perhaps Russia in winter, Reindeer hunt and atlantic Salmon fishing in Iceland, and a driven boar hunt in Poland or perhaps Romania. Calling turkeys in the Southern USA, and Ibex in Spain would be interesting too... aw this list will never get shorter!

I continue to hunt bear every year in Pennsylvania. One day I will get one. Also trying again for a Pennsylvania elk tag. Here in Virginia, I would like to get a turkey. This year I plan to start hunting whitetail deer. High on my list are pronghorn and cougar. A mule deer would be nice. Maybe red sheep in Texas. I can't hunt water buffalo -- my wife rode on one when we were in the Philippines. If I make it back to Africa, one of the cats -- probably lion, and the rest of the affordable spiral horns. Sheep and ibex are probably not in my future. I waited too late. If the chance ever came for a jaguar, I would be all over that!
 
I've hunted whitetail, turkey, dove, duck, geese, feral hogs and axis deer (the axis was also in Texas). Other than that, I want to pretty much hunt anything and everything listed by everyone else!:D
 
How does this sound? Start in August in the Yukon chasing moose. Then follow Fall south hunting as you go through British Columbia into the Western US and finish in Throckmorton TX for Thanksgiving in late November.

Red Stag - there are so many options to look at in Europe (to start). Argentina also looks interesting.
Roe Buck - After seeing a couple of reports this little deer came onto the radar. Several Euro destinations for this one.

Blacktails with a bow in Alaska. Perhaps a Coastal Black Bear.

A Wild Boar driven shoot would be something to partake in. Quick shots at open crossings.

I am spoiled and have so many options to choose from at home that can be on this list too.
I hunted Roe in Poland last summer, pretty easy hunt, beautiful land, beautiful people.
Not real expensive, great accommodations....
 
For me....

Ibex (Pakistan, Austria, Spain, etc.)
Maybe Bear, Moose or Caribou in Canada
 
I've booked water buffalo in Norther Australia for 18, that is definitely one of my bucket list hunts. I'm taking my Dad as it is one of his dream places to go and will never make it if I don't drag him there. Ya aren't guaranteed an extra minute on earth and I want to make sure that I have that memory the rest of my time here!
Brown Bear on the Kamachaka Peninsula is also a must do.
But still Bongo fill my dreams, if only I could get someone to buy this left nut!

I really want a Kodiak bear, mountain goat, Musk ox, caribou and some more exotics here in my home state of Texas. The only thing stopping me is money!! A lottery win would serve me well.

After almost 20 years in Alaska I think I should finally go for a mature moose.
Another Dall sheep will always be there, but I like the draw areas, tough odds.
Red stag and chamois in New Zealand.
Water buffalo in Australia.
 
Siberian Roe in.......... Siberia.
Would love to hunt this species of the Roe deer in the mysterious woods and landscape of Siberia.
