What's the best and worst African tasting game meat?

I have always stayed away from hunting predators because the meat is inedible. I've only hunted in the states but I don't know anyone who eats coyote, fox, mountain lion etc. the only exception would be bear. I have been lead to believe big cats are inedible, is this false? I thought you could not eat lion/leopard/cheetah etc.

I have been teasing someone at the camp about grilled Cecil. I'll tell you what it is like because I'm sure he will feed me lion this May
 
Sable and Eland are the best meats but don't toss a good free range Karoo lamb.

Worst meal in Africa? That would have to be ostrich. It was bad, almost as if it had spoiled. My wife and I were doing our best until thankfully the PH/Outfitter came in and tried some. He pronounced it bad. It was funny watching him argue with the cook who was his mother. They have a love/hate relationship. She pronounced it fine and ate all of her portion, but no one else did. She is a good cook, but there was something wrong with that ostrich.

We had several different cuts of Impala. They all tasted good.
 
My favorite is probably gemsbuck, then eland, kudu and most of the rest. Only thing I have eaten over there that I didn't care for was some springbuck, and gamy warthog. Bushpig was a big surprise, taste just like beef, seriously it does. Zebra looks uber rare even when its fully cooked. Taste s good though. Its mostly all good, but of course age and care play a role as in all meats.

Oh, and reedbuck cold cut sandwiches! Fine eating!

My PH in RSA last time out had made some wildebeest sausage that he bragged about. I bravely choked one down with lots of mustard, but my boy couldn't do it. Tasted bad.

now if you want to try sable fillet cooked to mouth watering perfection...... you have to come hunt one with us, as patsys patented method of sable fillet soaked in brine then roasted is really good.......:E Hmmm:...bluey ate loads of it, so what do they say "the way to a mans heart is through his stomach" or something like that......:K Serenade:.......:D Beers::E Big Grin:

Fresh kudu liver on the braii is amazing.

I will eat heart as well and like it. I honestly don't think I have ever had kidney. Not opposed to it, just haven't. Brain on the other hand.... :A Ill: I just can't handle the texture.

I promised @BRICKBURN that I was going to slaughter the biggest fattest sheep I could find when I got home from Vegas......... Been so busy, next week.


On a serious note though I noticed that any animal that is taken cleanly with one shot . It needs to have it's stomach promptly removed an have the excess blood cleaned out and hung for 3-4 days as a minimum. Then you can be guaranteed of some great tasting anything.

Except the sole of an elephants foot... That's always tough
 
Not really African..... My very first hunt I went on with some friends when on holiday in Asia last year, we caught some squirrels. My first kill and first game meat I ever ate. Squirrel has an interesting taste...kind of musky and a hint of chicken - much nicer than i expected. Funny thing is, I found it to be so much healthier than shop bought meat hahaha!!

I really need to try some good South African game meat now! What would you recommend I start with?

Hehehe I know. It is so embarrasing. Most of my life I have just eaten the old boring shop bought beef and chicken. I have so so much catching up to do :p.

My new hunting career should hopefully change that quickly ;)

Kudu liver is awesome, fresh on the coals, kidneys, thinly sliced fried in garlic butter with onions and mushrooms. Brains, spread thinly on toast, ground black pepper on top. I'm giving all my recipes away!
