What's the best and worst African tasting game meat?

I have seen way too many cooks cook prime rib like a roast and will cook it until it is well done.

A sad demise to a great piece of meat.

For me in Africa I found spring buck was the best, followed by black wildebeast. The kudu sausage that my outfitter had was very dry and I didn't care for it that much. But all the rest was devoured by all of us around the grill.
 
Eland is outstanding specially the brisket. Loved waterbuck too....
 
It is always interesting that the clients really seem to like zebra, but when you talk to the outfitters they don't.
That is interesting...When I was in Namibia I asked my PH don't you guys eat vegetables?... His comment was the animals eat the grass, we eat the animals! Bada ping bada boom...
 
The worst game I had cooked here in the USA was alligator. It was very "stringy", a lot of hard muscle or fiber, maybe it needed a slow cooker. I had a hard time cutting and chewing it....mind you a professional cook made the meal.

In the tail meat it is a star shaped pattern, for lack of a better description. If you don't cut it right in preparation it is terrible. If you go around that star and cut it out it is great.
 
@wesheltonj I have had bear and loved it, bear is simply a matter of proper preparation and butchering skills. I have had meat from 5 seperate bears and never had an issue with the flavor
 
Bear is good eats. Bear stew is a classic.

Yah, its a classic alright, right up their with Monkey stew. (actually the monkey stew was good). The fresh monkey brains was right their with the bear.

Eric, if you ever make it to St Louis you should try the Blue Oyster Bar. Best alligator tail in the world. Its down by the river front. It's a new Orleans style place. A couple blues and jazz bars in the area too.
 
I assume that you have not had bear.
I LOVE bear meat. I prefer it to deer meat!

Season and location is the key! Bears that feed mostly off of grass and berries are fantastic to eat. Bears that feed on rotted carrion taste like crap. Coastal bears in Alaska that feed primarily on rotted salmon are horrible to eat. Like hogs, bear meat tends to taste a lot like their primary diet. Also like pigs, quick care of the meat immediately after the kill is essential.

Spring bears are much leaner than fall bears, so they taste better in the spring IMHO.

Bear meat tends to favor the slow cooking techniques. Also, use a cooking method that allows the oil & grease from the meat to drain.

@35bore Alligator is good when farm raised and a little funky when wild. It's another one of those they are what they eat things.
 
Everything we had tasted good in Zim and South Africa. My PH said he did not like the taste of lion after we shot one. He said it was very chewy. Tracker and skinner both wanted it though.

we all thought my lioness was the best white meat we ever ate.we only got one meal,the trackers,etc got the rest.
